I'm rereading and recommending Peter Cozzen's mammoth five volume series on the Indian Wars. Formatted very similar to Battles and Leaders of the Civil War.
The books are:
The Struggle for Apacheria
The Wars for the Pacific Northwest
Conquering the Southern Plains
The Long War for the Northern Plains
The Army and the Indian

"a series that seeks to tell the saga of the military struggle for the American West, using the words of the soldiers, noncombatants, and Native Americans who shaped it."
